Ingredients
- 1 large can colossal pitted olives drained
- 20 slices thin cut or sliced pepperoni you can substitute salami if you prefer
- 1/2 small block white or cheddar cheese cut into 2 inch long strips
- 1/2 cup carrots cut into thin julienne strips
- 1/2 cup peppers (red and yellow) cut into thin julienne strips
- 1/2 cup zucchini cut into thin julienne strips
- 1/4 cup fresh herbs dill, basil leaves or parsley can be used

Instructions
- Cut a thin slice off of the bottom of each olive, forming a flat base
- Roll up slice of pepperoni and place inside pitted end of each olive
- Fill center of each pepperoni slice with desired combination of cheese, vegetables and herbs
- Stand filled olives on serving plate and add additional garnish if if you prefer
